Leche Flan (“Milk custard” in English) has been part of the Filipino palate for centuries. This sweet, savory food, which can primarily be made with egg yolks, can be found in many stores in the Philippines.
Method
- 1.Begin by mixing the egg yolks, heavy cream, milk, and condensed milk in a bowl.
- 2.Pour 1/3 cup of white sugar on the cake pan and heat it over a stove until it’s melted (look for an amber color). Alternatively, you can also melt it on a sauce pan an pour it over the baking pan. Let this cool down and crystallise.
- 3.Pour the mixture into cake pan. Pass it through a sift preferably to get a smoother texture.
- 4.Cover the pan with a foil to prevent overcooking the top.
- 5.Pour some water onto your air-fryer basket, just enough to reach half of the height of the pan. This water bath will help in controlling the temperature of the custard so it doesn’t turn to scrambled eggs.
- 6.Bake it at 170C for 1hr. Use the toothpick method.
- 7.After baking, the custard should still look smooth but not too jiggly. Let it sit for at least an hour. Preferably, put it in the fridge over night.
