Tortang talong, also known as eggplant omelette, is an omelette or fritter from Filipino cuisine made by pan-frying grilled whole eggplants dipped in an egg mixture. Meanwhile, a Spanish omelette or Spanish tortilla is an omelette made with eggs and potatoes, often including onions
Method
- 1.Slice the onion and slowly caramelized it on a pan with Olive oil
- 2.Slice the potatoes into thin chips using a mandolin or knife. Fry until it’s almost crispy.
- 3.Roast the eggplant in the over, air-fryer or preferably, over a direct fire.
- 4.Set aside the eggplant to cool down
- 5.Remove the charred skin of the eggplant
- 6.Whisk 1-2 eggs and dip the eggplant on the whisked egg
- 7.Whisk the rest of the eggs and season to taste
- 8.Mix the caramelised onions and potatoes in the egg mixture
- 9.Add a little bit of oil to the bottom of a 10-inch non-stick skillet over high heat. Once hot, pour potato mixture into it and cook on high heat for 1 minute. Reduce heat to medium-low and cook for about 5 minutes.
- 10.Run a rubber spatula along the outer edges of the tortilla to make sure it’s not sticking and to help it form its shape.
- 11.Once it starts to firm up around the edges and in the center (although it will still be a little runny on top) place a large plate (larger than the size of the pan) over the pan and flip the omelette onto the plate.
- 12.At this point the cooked side of the omelette is facing up.
- 13.Add more oil to the pan.
- 14.Cook the eggplant and egg mixture to make tortang talong.
- 15.Flip the eggplant on the other side once it’s firm on one side.
- 16.Now gently slide the omelette back into the pan. Aim the omelette to slide into the very back of the skillet and use the spatula to help slide the rest of it off the plate and into the pan.
- 17.Now use the spatula again to press the sides of the omelette in and under, to keep that rounded edge.
- 18.Cook on high heat for 1 minute, and low heat for 2-3 more minutes or until done.
