Method
- 1.Set aside 30g-50g of cold water

- 3.Mix the dough for about 5 minutes until it comes together but still a little shaggy
- 4.Add the salt and continue mixing for 3-5 minutes
- 5.Add the rest of the water and continue mixing for 5-8 minutes until it looks smooth
- 6.Let it rest for an hour in room temperature and fold the dough every 15 minutes
- 7.Cover the bowl with a plastic wrap and proof in the fridge for 24-72 hrs
- 8.Before using, let it rest in room temperature for 2-4 hrs
- 9.Ball the dough after 2 hours of resting
